Ingredients
Par Boiled Rice - 2 glass ( I use Tanjavoor Poni boiled rice)
Salt – to taste
Water- for grinding
Ghee/ fresh coconut milk
Banana leaf
Method
Soak boiled rice in warm water over night. Grind it in a grinder by adding little water and salt. The rice should be grinded well and soft. Heat an clay pan ( mun kal) over heat. Take a scoop of rice flour with your hand Roll the rice flour with your hands and put it on banana leaf press it with your palm and make a circle shape and cover with another banana leaf. Once pan is hot put this and close with lid. Turn over the other side after 1 or 2 minutes. Repeat this until leaf turns dark color. Once its black color remove leaf and put it back on pan and cook for few minutes more until two sides get cooked. Press over the orotti with a coconut shell spoon (cherathe kayil) at several intervals. Roll the sides of the orotti over the pand so that the sides will also be cooked. Remove from pan and pour little ghee or keep it in fresh coconut milk the orotti. Serve hot with any curry. Orotti is a popular breakfast dish of malabaris…
