Kids loves cornflakes and peanuts. We can make cookies with both.
Ingredients
1 cup all-purpose flour
1/2 teaspoon baking powder
3/8 teaspoon salt
8 tablespoons unsalted butter, softened
1/4 cup granulated sugar
1 teaspoon vanilla extract
3 cups cornflakes, crushed
1/2 cup crushed peanut
Method of making
Preheat the oven to 180°C and place a rack in the center. Line two baking sheets with nonstick foil or parchment paper.
Mix the flour, baking powder, and salt together in a medium-size bowl; set aside. In the bowl of a stand mixer fitted with a paddle attachment, or in a large mixing bowl, using a handheld electric mixer, beat the butter and sugar on medium-high speed until light and creamy. Beat in the vanilla and continue mixing on medium-high speed for another minute. By hand, stir in the flour mixture until incorporated. Stir in the cornflakes, peanut. Scoop up level tablespoonful’s of batter and shape into balls. Roll out balls in cornflakes and Arrange the balls about 2 1/2 inches apart on the prepared baking sheets. Bake for 10 to 12 minutes, or until the edges are lightly browned. Let cool on the baking sheet for about 3 minutes, then transfer to a wire rack to cool completely.
