 Neri Pad


Ingredients
Chicken – 500 gm ( Cooked with pepper, garam masala, turmeric and salt)
Onion - 2 medium, chopped
Green chilli - 2-3, chopped (adjust according to your taste)
Ginger and garlic - ½ tsp Crushed
Chili powder - ½ tsp
Turmeric powder - ¼ tsp
Pepper powder -
Coriander leaves - 1 tsp Chopped
Kaima rice (Basmati rice) - 1 cup
Cardamom -3
Coconut - 1/2 cup
Eggs – 5-6
Salt - for taste
Oil - I used coconut oil
Ghee - ½ - 1 tsp


Method:
Soak the rice at least 4 hours. Clean the chicken and cook with turmeric powder, pepper powder and salt. Start with shredding cooked chicken using hands or fork and keep on aside. Heat oil in a pan and add chopped onion. When onion becomes soft, no need to brown, add green chilli, ginger and garlic. Cook for 2-3 mins until raw smell goes. Add chilli and turmeric powder and cook for a min. Add shredded chicken and coriander leaves to this and mix well. Cook for 2-3 mins, till everything is well combined and keep on side. Wash soaked rice add it in a blender with little water and cardamom blend till it's smooth. Now add coconut, eggs and salt blend it well. Now make this batter into three equal portion. Take the chicken masala and make two equal portion keep it on side.

Generously grease a bottomed nonstick pan (you can use cooker without putting weight) with ghee. Heat the nonstick pan and reduce the flame to the lowest. Keep a old fry pan below the nonstick pan so it will not be burned below. Pour first portion of the rice batter to the pan and just turn the pan so on sides of the pan batter will be there and put the lid and just wait 5 minutes then add the one portion of chicken masala to it. Close the pan and cook on the lowest flame for 5 -7 mins. After 5-7 mins, you can open the lid and pour second portion of rice batter and cook for 5 minutes then add
the one portion of chicken masala to it. Close the pan and cook on the lowest flame for 5 -7 mins. After 5-7 mins, you can open the lid and pour rest of the rice batter and cook for 5 minutes then add the rest of the chicken masala to it. Close the pan and cook for 15 minutes. Now keep another pan add little oil add few coriander leaf then just make the Neri pad upside-down on this pan and close with lid and just cook for 5 minutes.
